Mother’s Day Gifts and Butterfly Cakes

This year Mother’s Day falls at the very end of March and hopefully by then Spring will really feel like it has arrived. I am writing this looking out at our garden on a cold, wet day and can only dream of sitting outside in the sunshine with a glass of wine or even a cup of tea and eating a beautiful butterfly cake.

But, forever living in hope, I thought I would include a simple recipe for little butterfly cakes in this blog which are sure to put a smile on your Mum’s face this Mother’s Day – whether it’s garden weather or not!

Simple Butterfly Buns 

100g butter, softened

100g caster sugar

2 large eggs

100g SR flour

1 level tsp baking powder

icing

175g butter, softened

350g sifted icing sugar

raspberry jam

Preheat the oven to 200 degree c/fan 180 degree c/gas 6. Place fairy cases into a 12 hole bun tin.

Beat the softened butter and sugar until pale and then add eggs and mix, followed by the flour and baking powder. Fill each paper case with the mixture.

Bake for 15-20 minutes until the cakes are well risen and golden brown. Lift the paper cases out of the bun tin and cool on a wire rack.

To make the icing, beat the butter and icing sugar together until well blended, Cut a circle from the top of each   cut this circle in half. Fill the hole with 1 tsp of jam and then pipe a swirl of butter cream on top. Rearrange the half slices back onto the cakes to resemble butterfly wings. Dust with icing sugar to finish.
